Here are a few tricks for you
When you shave a skin, apply foam, just like for your face. Then use a real rasor blade and not a razor. It is perfectly OK to shave skins, nothing wrong with that.
Always shave the skin when wet and shave it agains the hair (across the implantation of the hair). You will quickly get used to the blade and you'll find it very fast and efficient. You want to hold the blade between you thumb and index finger and major finger giving enough pressure for the blade to bend a bit. Give and angle to the blade and don't be shy using 2 to 3 inches motions at a time.
I shaved herds of skins in my life and once you get the trick right, there is no problem with shaving anymore.
BUT, it always stays some hair (and this is your problem) If the skin is still wet, use sand paper and finish with the sand paper that is used par car painter, the one you wet before using it. This will remove everything from your skin. If the skin is dry, use the same very fine sand paper (after using rougher one) but keep it dry. The sanded hair will transfor into thin powder that you want to remove from the surface of the skin. this prevents the sand paper from sanding after a while.
I hope this is helping you. Anyway, it is always good to use REAL skins and suffer a bit to mount it.
