Steer/cow & colour

Sorry if this has been done before [I did a search but found nothing].

What is [or is there] the difference between Steer skin & Cow? To head off the no doubt amusing replies ... I know that a steer is a neutered bull and a cow is a girl!!!

My 2 Gonbops came with Bill Confer steers and they sound and feel great. They are a white [almost creamy colour]. My 3rd GB came with cow (translucent) and was ok, but not great. Is the creamy colour of the steer what all steer hides look like or is the colour/sound something to do with processing?
