I think its no problem, as long as you crank them down after playing!
Wood is very resistable, I think that only quick and large variations in temperature could possibly affect the shape (and thus the sound) of your congas.

What temperature does the room have?
If it's not really cold, and not really hot and theres no tension on the skin, then I think it's no problem!
Just rub from time to time some manteca de corojo/palm oil or something similiar into the head, that will keep it in good condition.

Tempature and humitity effect congas both the wood and the heads, keeping them in a constant air condistioned room is better then constantly changing temptures. At church they dont run the a/c all day and when its a day for church they do this happends a few times a week which really has an effect on my drums both the head and the wood. I switched to synthetic heads and its way better but I still notice a change and thats from the wood because the sythetic head really doesnt get effected much but normal tempature changes the shells to contract and expand being made from woods.

Bottom line its better they be in a/c they a more changing tempature situation. If they get dry rub them down.
