I've only played oak, cherry and the gon bop mahogany on a regular basis. I've played on a cuban sonoc caoba quinto and a set of honduran mahogany mopercs. This is how I would describe the sound.
Caoba, tight and dry
Oak, bright, not too much sustain
Cherry, nice sustain, warm sound
Mahogany- kind of like the cherry beautiful meaty sound with great sustain
Gon bops mahogany- dry
I aslo had a thin cuban drum much likethe requenos, it was very bright and dry.
