I've played real Valje's and do like them, but by the age there are not many in good shape. Considering the cost of vintage sets, I doubt I would ever try to get a set.
WBB, true the LP used American cherry stock that is rather whitish. Just depends on the cut. The heartwood is dark, and outter stock is white/creme. A good example is redwood- it has a mix of red/white lumber stock in Home depot etc.
